Wine Making

Handpicked put to tank, with no additions including sulfur, allowed to ferment on whole bunches, and drained off to barrel over a 9 month period, every two weeks.

This allows for carbonic fermentation to occur, imparting unique and complex flavours without extracting any harsh phenolics from pressing or more traditional maceration on skins.

Wine is pulled from barrel after 9 months and bottled without any fining, filtration or sulfur added.
