Even Keel Rosé 2020
A blend of three vineyards on the Mornington peninsula with 70 percent of blend coming from Tempranillo grapes sourced from the Hickinbotham vineyard 194 Nepean Hwy , Dromana situated on sandy soils , yield 2 tons/acre
10% Pinot Noir saignee (aka Pinot Noir ferment drain offs) from Mrs Nicks vineyard Myers Rd Merricks, situated on well drained loamy soils 1.5 tons/acre. And 20% from a spicy Syrah from sandy soils of Pax Hill One Craigee Rd Mt Martha 1 ton/acre
The fruit is handpicked across three vineyards and whole bunched pressed using a gentle champagne press cycle. No enzymes or sulfur are used at the press tray and the juice is oxidatively handled to get rid of oxidative enzymes early on in the winemaking process. The wine is left at ambient or if needed chilled to 15 degrees and transferred to old French oak barrel with full solids and minimal sulphur is added. The wine is allowed to ferment using wild yeast and left unsulfured until the following summer when in most cases the wine completes full malo-lactic fermentation. A minimal amount of sulfur is added and left in barrel for a total of 3 months where it is racked off gross lees and transferred to tank. The resulting wine is bottled using no finings and minimal filtration.
A fragrant nose of strawberries and cream, with a hint of ripe white peach. The palate is elegant with generous weight underpinned by clean acidity. A dash of white pepper and spice leading into a savoury finish.
